Broccoli Omelette

1 medium [44 g] Egg

0.7 cup chopped [63.7 g] Broccoli

0.25 medium [27.5 g] Yellow Onions

0.5 tbsp [6.4 g] Clarified Butter Ghee

1 Dash [1 g] Himalayan Pink Salt (To Taste)

1 dash [0.1 g] Black Pepper (To Taste)

0.75 cup [150 ml] egg white

1 tbsp (packed) [15 g] Feta Cheese

Directions

Wash and cut the broccoli into bite size pieces.

Chop the onion into a fine dice and set aside.

In a skillet on medium heat, add the ghee and saute the broccoli and onions for 4-5 minutes.

Crack the eggs into a bowl and mix well, seasoning with salt and pepper to taste.

Pour the eggs into the skillet and cover with a lid. Cook for about 4–5 minutes, until almost set.

Sprinkle crumbled feta cheese evenly over the top, cover again, and cook for another 1–2 minutes until the feta softens and the eggs are fully set. Serve warm and enjoy.
